Christopher Hendon came to the attention of the coffee world in 2015 with the release of ‘Water for Coffee,’ a book he co-authoured with Maxwell Colonna-Dashwood (who presented on the subject at last year’s ECCM). Holder of a BSc. Adv. (HONS) from Monash University and a PhD from the University of Bath, he presently works at the Massachusetts Institute of Technology as a Postdoctoral Associate. In his own words, he is a ‘theoretical materials chemist with a special interest in models of functional frameworks for catalysis and light harvesting.’ In addition to other research and publication, he continues to collaborate with people in the specialty coffee industry to experiment and educate.
